BBQ Corn on the Cob
Lightly char-grilled corn on the cob makes for the perfect summer side dish. When picking your corn, look for husks that are bright green and tightly wrapped against the cob, as this means it is fresh!

Ingredients
4 corncobs, husks pulled back and tied with string
1⁄4 cup ricotta
1⁄2 cup coriander leaves, finely chopped
Zest of 1 lime
Extra-virgin olive oil, to drizzle
Sea salt and cracked black pepper, to season
Method
Preheat a BBQ or char-grill pan over high heat. Drizzle the BBQ or pan generously with olive oil.
Cook the corncobs for 10 minutes, turning when slightly charred.
Meanwhile, mix together the coriander leaves, lime zest and olive oil.
When the corn is cooked, spread over the ricotta and top the corn with the coriander mixture.
Season with sea salt and cracked black pepper.
