Raw Peanut Butter & Oat Squares With Dried Cranberries

 
Raw Oat and Nut Slice
 

High in protein, fibre and healthy fats, these bite-size peanut butter and oat squares are my favourite healthy treat to enjoy any time of the day!

Freeze time: 30 min

Makes 12 slices or 24 squares

Ingredients

1 cup Medjool dates, pitted

1/4 cup maple syrup

1/4 cup almond or peanut butter

1 cup slithered almonds

1 + 1/2 cups rolled oats

1/2 cup dried cranberries

Method

Preheat a fan-forced oven to 180 degrees celsius.  On a baking tray, lined with baking paper, scatter over oats and almonds and bake for 10 minutes, or until lightly toasted.  

Meanwhile, process dates in a food processor until forms a 'dough' like consistency.  Warm maple syrup and almond butter in a small saucepan over low heat.  Combine oats, almonds, dates and warm syrup mixture into a large mixing bowl.  Mix together until well combined.

Line an 8x8 inch slice pan with baking paper and transfer mixture into the pan.  Spread mixture in tray and press down. Sprinkle over dried cranberries and press down firmly.  Place in the freezer for 30 minutes to freeze.  Cut into slices or squares and store in the fridge or freezer in a container. 

Slices can be kept in the freezer for up to 3 months or in the fridge for 1 week.
