Super Seed Loaf

Packed with fibre, protein and healthy fats, this loaf is a great choice to pair your dips with, make a sandwich, or simply smother with avocado (a perfect example of how the simple things in life are often the best)!

Prep time: 1 hour + 15 min

Cook time: 20 min

Makes 1 loaf

Ingredients

1 cup sunflower seeds

1/2 cup sesame seeds

1/2 cup almonds, slithered

1 cup rolled oats

1/2 cup chia seeds

1/2 cup psyllium husk

1 cup wholemeal flour

2 cups water

1 tbsp maple syrup

1 tbsp extra-virgin olive oil

1 tsp sea salt

Method

Mix all the dry ingredients into a medium-large mixing bowl. Pour the wet ingredients over and mix to combine.

Cover the bowl with a tea towel and set aside for 60 minutes to allow all the water and seeds to fully absorb.

Line a loaf pan with baking paper and transfer the mixture to the pan.

Pre-heat oven to 180 degrees Celsius and bake for 30 minutes, or until cooked through.

Remove from pan and allow to cool completely before slicing.
