Healthy Toast Toppers

So if you know me I am a muesli kinda girl.  Maybe a smoothie for brekkie here or there but muesli is my jam.  However my philosophy is balance and eating the same thing for breakfast every morning is not very balanced….So I thought I would mix it up a bit.  How can you say no to combinations like tahini and banana or fig and ricotta. You just can’t.

Here are my favourite toast topper combos.  This breakfast is really great if you need to be at school/uni/work early but aren’t the type of person to feel hungry in the morning (I feel sorry for ‘those’ types of people, as brekkie is my favourite meal of the day).

It is so important to eat brekkie in the morning, even if it is a piece of toast or two.  Not only does it kick start your metabolism so your body is ready to burn and not store calories, it also sets you up for a day of healthier eating.  You will find yourself not being tempted by foods that make you feel good for a hot second.

Tahini, Banana and Cinnamon

Ingredients:

1-2 pieces of wholemeal toast

1 banana, thinly sliced

1 tsp cinnamon

1-2 tbsp hulled tahini

1 tsp maple syrup

To make:

Once toast is cooked to your liking, spread over the tahini and banana slices.  Sprinkle with cinnamon and drizzle with maple syrup.

 

Fig and Ricotta

Ingredients:

1-2 pieces of wholemeal toast

1 medium size fig, thinly sliced

1 tsp cinnamon

75g ricotta

1 tsp honey

To make:

Once toast is cooked to your liking, spread over the ricotta and fig.  Sprinkle with cinnamon and drizzle over honey.

 

Avocado, Dukkah and Tomato

Ingredients:

1-2 pieces of wholemeal toast

1/2 avocado

1 tsp dukkah

1 medium tomato, sliced

To make:

Once toast is cooked to your liking, spread over the avocado and tomato.  Sprinkle with dukkah.  (Tomato can be omitted.  Instead add a squeeze of lemon to the avocado and dukkah).
