The Most Delicious and Healthy Caramel Slice

Confession time.  Up until I made this caramel slice my boyfriend had been politely eating my healthy ‘treats’.  It was only when he tried this baby that he realised desserts could be tasty and healthy.  Now that’s what I call a beautiful combo!


  • Base: ½ cup cashews, ¾ cup almonds, 4 medjool dates, 1 tbsp water, 2 tbsp vanilla powder.
  • Caramel: ½ cup unhulled tahini, ½ cup maple syrup, pinch of salt.
  • Chocolate: ¾ cup coconut oil, ⅓ cup cacao (I used Loving Earth cacao powder), 2 tbsp maple syrup.

To make:

  1. Blend each later separately and put one on top of the other. Place in freezer to set.

Best served before bed with a warm hot choccy and a good book!
